Ingredients

  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 12 oz fettuccine or linguine
  • 3 cups chicken or vegetable broth
  • 1 cup whole milk
  • 1 cup grated parmesan cheese
  • 2 tablespoons butter
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley, for serving

Method

  1. Heat the olive oil in a large deep skillet or pot over medium heat. Add the garlic and cook for 30 seconds, until fragrant.
  2. Add the uncooked pasta, broth, and milk. Bring to a gentle boil.
  3. Reduce to a simmer and cook, stirring often to prevent sticking, for 12-15 minutes, until the pasta is tender and the liquid has reduced to a creamy sauce.
  4. Turn off the heat and stir in the parmesan, butter, and black pepper until melted and smooth.
  5. Season with salt to taste, garnish with parsley, and serve immediately.
