Ingredients
  

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped parsley

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken thighs dry and place them in a large baking dish.
  3. In a bowl, whisk the olive oil, garlic, lemon juice, lemon zest, oregano, thyme, salt, and pepper.
  4. Pour the mixture over the chicken and rub it into the skin.
  5. Bake for 35-40 minutes, until the skin is golden and the internal temperature reaches 175°F.
  6. Sprinkle with parsley and serve with the pan juices.
