Cozy 30-Minute Chicken Noodle Soup

When the weather turns cold or someone in the house is feeling under the weather, this is the pot of soup I reach for. It tastes like it simmered all day, but it comes together in about half an hour.

Using cooked or rotisserie chicken makes it fast, and a handful of fresh herbs at the end keeps it bright.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery and cook for 5 minutes, until softened.
  2. Stir in the garlic and cook for 30 seconds, until fragrant.
  3. Pour in the chicken broth, then add the thyme and bay leaf. Bring to a boil.
  4. Add the egg noodles and cook for 6-8 minutes, until just tender.
  5. Stir in the shredded chicken and heat through for 2-3 minutes.
  6. Remove the bay leaf. Stir in the parsley and lemon juice, then season with salt and pepper to taste and serve hot.

  • Cook the noodles right in the broth for the most flavor.
  • If you plan to freeze the soup, leave the noodles out and add them fresh when reheating so they don’t turn mushy.
  • Rotisserie chicken is the ultimate shortcut here.
