Crispy Honey Garlic Salmon
Salmon is my weeknight hero: it cooks in minutes and feels like a proper dinner. This honey garlic version has crisp edges and a sticky, glossy glaze that everyone fights over.
It’s fast enough for a busy Tuesday but good enough for guests.

The Secret to This Recipe
Pat the salmon completely dry before it hits the pan. Dry fish sears and crisps; wet fish steams and sticks.

Crispy Honey Garlic Salmon
Ingredients
Method
- Pat the salmon fillets dry and season with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the salmon skin-side up and sear for 4 minutes, until golden. Flip and cook 3 more minutes, then transfer to a plate.
- Lower the heat to medium. Add the butter and garlic and cook for 30 seconds.
- Stir in the honey, soy sauce, and lemon juice, and simmer for 1-2 minutes until slightly thickened.
- Return the salmon to the skillet, spoon the glaze over the top, and cook for another minute until sticky and glossy. Serve immediately.
Expert Tips
- Salmon is done at 145°F and should flake easily with a fork.
- Don’t move the fillets while they sear; let a crust form so they release cleanly.
- Fresh lemon juice balances the sweetness of the honey.
Substitutions & Add-Ins
- Add a pinch of red pepper flakes or a drizzle of sriracha for heat.
- Swap honey for maple syrup.
- Stir in a teaspoon of grated ginger with the garlic.
How to Store Leftovers
Refrigerate leftovers in an airtight container for up to 2 days. Reheat gently to avoid drying out the fish.
