Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped parsley

Method

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken thighs dry and place them in a large baking dish.
  3. In a bowl, whisk the olive oil, garlic, lemon juice, lemon zest, oregano, thyme, salt, and pepper.
  4. Pour the mixture over the chicken and rub it into the skin.
  5. Bake for 35-40 minutes, until the skin is golden and the internal temperature reaches 175°F.
  6. Sprinkle with parsley and serve with the pan juices.

Tips for the Best Results

  • Pat the skin very dry so it crisps instead of steaming.
  • Bone-in thighs stay juicier than boneless.
  • Broil for the last 2 minutes for extra-crispy skin.

Variations

  • Add halved baby potatoes to the pan to roast alongside.
  • Swap the herbs for rosemary and sage.
  • Add a pinch of paprika for color.

Storage

Refrigerate leftovers for up to 4 days. Reheat in a 375°F oven to keep the skin crisp.
